Carrot Cake

Carrot cake was one of my favorite recipes to make with my grandmother growing up. Now we did not always see eye to eye or see each other but when we saw my grandmother it was all about potato soup and carrot cake (our 2 favorite things to make). I have not made this recipe since 2007 when I had my first born Kristopher. My second born, Kailee, has been really into learning how to bake as of lately so I figured what better recipe to start with then something my grandmother and mother showed me sooooo many years ago when I was her age.

You Will Need:

2 Cups Organic Flour
1 tsp Organic Vanilla Extract
1 tsp Organic Cinnamon
1/4 tsp Organic Nutmeg
1/8 tsp Organic Ground Clove
3 Organic Pasture Raised Eggs
1 1/4 Cup Organic Apple Sauce
1 1/2 Cup Organic Sugar
1 tsp  Baking Soda
1 tbsp Baking Powder
1/2 tsp Real Salt

Cream Cheese Frosting:

8 oz pkg. Organic Cream Cheese
1 stick Organic Butter
1 1/2 tsp Organic Vanilla Extract
1 1/2 Cups Powdered Sugar

Blend together your eggs, sugar, and applesauce

Add vanilla

Once blended add your dry ingredients

Blend until well incorporated

Grate your carrots, this honestly took us forever because stupidity we used BABY CARROTS!

Fold in carrots

Pour even amounts into your cake pans

Time to make your frosting; add cream cheese and butter into your kitchenaid mix well

Add vanilla and powdered sugar until the flavor is to your liking (I added the amount above... I do not like super sweet frosting) then I folded in the nuts

Spread onto cake

Put in fridge until frosting is set

Enjoy!

Crockpot Hot Chocolate

The BEST hot chocolate I have ever had or made! This hot chocolate has become a VERY traditional drink around the holidays and winter time. We find that we have to make sure to have the ingredients on hand and ready for whenever we want hot cocoa and boy it does not disappoint. Winter this year has been absolutely horrible here in Ohio, not to sure why but oooeee I am over it. Needless to say my crockpot has been getting a workout with hot chocolate and apple cider. I keep telling myself, it is almost over, you can make it through the -2 degree weather! But it is very hard to do since it never gets this cold here; in the 6 years I lived here it has never been this cold.

You Will Need:

Homemade Marshmallows
6 Cups Organic Raw Milk
14 oz. Homemade Sweetened Condensed Milk
2 tsp Organic Vanilla Extract
1 1/2 Cup Organic Heavy Cream
2 Cups Soy Free Chocolate Chips

Add milk, heavy cream and vanilla to the crockpot

Add chocolate chips

Add condensed milk

Cook on low for 2 hours, stirring often. Before serving whisk well to break up any chunks of chocolate

Blueberry Cheesecake Popsicles

I love creating new exciting popsicles that make my children want to be involved in the process. Kailee's little hands were all over making these it was so much fun to watch her excitement. Kailee had an amazing time making these so be sure you get your children involved! I  must say I am not fan of blueberries at all however the cheesecake portion of these makes me enjoy the blueberries. While we all know blueberries are very good for you in so many ways however I just do not like them at all. But put blueberries in this, and I am GAME! They are amazing! Literally taste like you are eating cheesecake not a popsicles... mmm!!! (might need to pull one out of the freezer...haha) Be sure to share your photos on our FaceBook page as we LOVE seeing your creations!

You Will Need:

1 Pint Organic Blueberries
2 tsp Organic Vanilla Extract
1/2 Cup Organic Cream Cheese
4 tbsp Organic Graham Crackers
1/4 Cup Water
2 tbsp Organic Sugar
1/2 Cup Organic Milk
1/2 Cup Water
4 tbsp Organic Raw Honey, divided
1 tsp Organic Butter, melted

Crush your graham crackers, add sugar, butter and stir until mixed throughout

Place blueberries, water in your blender

Add honey to the blender

Blend until smooth, place in cup and set aside

Clean out blender, and place cream cheese

Add honey

Add vanilla

Add milk

Blender until smooth and be sure all the ingredients are blended well

Pour your cream cheese mixture into bottom of your popsicle mold, we ended up using two different molds because we made so much of this

Add some granola in between layers

Add blueberry mixture, continue to fill mold switching between cheesecake mixture and blueberry mixture

Top granola, are they not beautiful in the mold!!?

Add top of popsicle mold, add popsicle sticks to them and freeze overnight

Be sure to wrap these in parchment or wax paper before placing them into the ziplock.

Crockpot Apple Cider

With fall fastly approaching, trust me since we move in the fall this countdown is on my calendar!! And I truly cannot wait! So I figured why not make something fall-ish to remind me of what is coming out way (not that I need reminding lol). When it comes to the sugar and how much you add you really want to measure it for yourself what you like. I tend to enjoy the apples providing most if not all the sugar in my apple cider but I do add a little. Some of the ingredients here are not pictured, I left the photos up to my daughter Kailee and she neglected to let me know that she did not photo the spices lol. Well, be sure you share your photos once you make this! Keep in mind you can use organic raw honey, organic coconut sugar, organic maple syrup, organic brown sugar or organic regular sugar like I did.

You Will Need:

10 Organic Apples, I used Honeycrisp and Granny Smith
3 Organic Cinnamon Stick
1 tsp Organic Ground Clove
1/2 tsp Organic All-Spice
1/2 tsp Organic Nutmeg
1/3 Cup Organic Sugar
10-12 Cups Water
Sliced Organic Oranges (Optional)

Wash, cut and corn apples, place in crockpot then add spices and sugar

Cover and cook on high for 3-4 hours or low for 6-8 hours

An hour before the cider completes, remove the apples and oranges if you add them be sure to push all the juice out of them before discarding. Place pot back on for the last hour, afterwards be sure to strain the apple cider through a fine steeve (I covered my strainer in cheesecloth)

Serve warm, I like to leave the crockpot on warm while hosting a party and enjoying family company with a cup of warm cider!
