Closed on OUR HOME!!

We have been busy bees since October 30, 2017, when my 17 day vacation started at work. I have been looking forward to this vacation but at the same time dreading it because I knew it meant a LONG journey of unpacking and decorating our house. November 2, 2017 we woke up at 6:30 AM checked out of the hotel we were staying at for a month, packed up our U-Haul and took our belongings to our house (we spoke with the building manager and he allowed us to unload our U-Haul in the garage since we have to turn it in that day before closing). Kris, Kai, Dan and myself worked VERY hard to get the U-Haul unpacked within 2 hours (a 26 foot U-Haul full!! I am very impressed by us! we rocked it out!) After we unpacked the U-Haul, we headed to turn the U-Haul in, then headed to Dublin to close on our house. Once we closed, we decided we needed a second car (with Dan working late nights and far away now, if anything happened at the kids school, I would not be able to get to them, so a second car was needed). We walked in, signed for the 2016 Dodge Durango and headed home to unpack. At this time, it's 4:00PM and we are all exhausted but knew we had a long night ahead of us. Here is a slideshow/video of our journey to our forever home. As you all know, we've been looking and working hard for over a year to get here, and it still does NOT feel real life!! This week we have ADT being installed, and our storm doors. We still have our guest room to decorate and furnish, our front sitting room to decorated and furnish and I still need a desk! We also are saving to put our fence in, hopefully that happens ASAP but we shall see! Hope you enjoy!

Mac & Cheese

I will never, ever, ever buy boxed mac and cheese again!! After being able to make this super easy recipe within half the time of boxed mac and cheese! I am sold! Investing in a instant pot was the best thing I have ever done, there are so many recipes that make my life so much easier. Working a full time job, cleaning a house, and taking care of two growing children sometimes dinner can be forgotten and in the back of the mind- it happens. But being able to cook a meal in a fraction of the time seriously has saved my life. If you have not invested in an instant pot, you need too!! (links below are affiliate to help keep this blog running) This would be PERFECT on your holiday table this year, I sure know it will make appearance on our table (if this comes to your holiday dinner table, be sure to share it with us on FaceBook).

You Will Need:

1 Box Organic Elbow Noodles
2 Cups (or more) Organic Mild Cheddar Cheese
1/2 Cup Organic Heavy Cream
4 Cups Organic Chicken Broth or Veggie Broth (adds flavor)
2 tbsp Organic Butter
Salt & Pepper, to taste





Add noodles to your instant pot insert


Measure out your broth, season with salt 


And pepper


Add your broth to your instant pot insert and butter to the pot


Pressure the pressure button (or manual depending on your instant pot) be sure your knob is on sealed not venting


Lower time to 4 minutes, once it is done, quick release 


Once done, stir your noodles, add your heavy whipping cream (you make need more or less than the above amount, the more you add the creamer the mac and cheese is)


Now time to add your cheese, stir until it is melted completely, again you can add more or less cheese (or mix different types of cheese)


There you have it, creamy mac and cheese (the ribs, twice baked potatoes were all made in our instant pot too- we gave that instant pot, Glitch, a work out. Yes I made our pot Glitch)

Our home update

Y'all!!!! Our home is completed!!!! Now they just need to add sod and finish paint, looks like we might be closing sooner than they first thought!!! Thursday 10/26/2017 we are going to our final walk thru and I truly cannot wait. We ordered all of our furniture, appliances, and whatever we needed for the house; we decided NOT to keep the appliances the house came with (instead of upgrading them with the builder we bought our own for much cheaper). So here are some photos enjoy! A completed video will be coming once we move into the house and I get some time on my hands after unpacking and setting up my work computer.







I guess the boys decided to beat each other up while they have room too!

House Update 09/04/2017

Our home progress is just stunning us, we cannot believe how fast this process is going!! I am so in love with what we decided to do and pick for our home!! Walls are going up this week and I cannot wait for the construction manager Andy to send us photos of that!! In the meantime here is what "she" looks like now!!

Yogurt with Strawberry Compote

I love making yogurt homemade, not only does it save us money, but we can control the ingredients and it is super rewarding to know you made something your family can enjoy instead of store bought. Recently, amazon had the prime day deals and I scored an amazing instant pot for $43.15, ended up missing a part so amazon refund $22.00 total purchase price was $23.15 for a 6 quart instant pot!! I was shocked and tried to buy a second one but was too late. Needless to say, this instant pot is gettings its workout for sure! Having made homemade yogurt in my crockpot before I thought this would be the same, if not easier and it surely was. If you do not want to add sugar or vanilla into your yogurt then you do not have too it is up to you however you like it. Well, I hope y'all enjoy this new recipe and section we are adding to the blog. I know I am very excited to use this instant pot and get recreating amazing homemade dishes in half the time. You Will Need:

1 Gallon Organic Milk (not ultra-pasteurized)
1/2 tsp Organic Vanilla (or vanilla bean)
1 Cup Organic Plain Whole Milk Yogurt
1/2 Cup Organic Sugar








Compote:

2 Pints Organic Strawberries
1/4 Cup Organic Sugar
1 tsp Organic Vanilla (or vanilla bean)
2 tsp Pure Lemon Juice





Add the milk to your instant pot


On my instant pot, I had to press the yogurt button twice to have it say boil


Once it is done boiling it will be about 177-180 degrees that is perfect
Add the sugar, and vanilla and whisk until sugar is dissolved


Now you want to cool the milk down to 107-110 degrees


Remove 2 cups of the warm milk and add to a bowl with the yogurt starter


Stir until combined and no more lumps


Add yogurt into the instant pot and stir to combine


Press the yogurt button once, and change the time to whatever you want to let the yogurt sit for. Please remember the longer the yogurt sits the more tang to the yogurt I let mine sit 12 hours (oh the tang is good! but I perfer 8 hours)


This is after 12 hours


Place cheesecloth into a strainer and pour yogurt into the strainer, you will need help here lol
I allowed mine to strain for 3-4 hours not a big fan of super thick yogurt but if you are let it strain longer


Here it is all done.. but wait there is more!!


Place your cut strawberries into your instant pot


Sprinkle your sugar onto the berries and allow them to sit for 15 minutes, this helps produce the natural juices in the berries and flavors them


Add your vanilla


Add the lemon, not too much here or it will overpower the berries


Turn the instant pot on pressure cook for 1 minute with it closed do not vent


Once completed allow to cool for 15 minutes then remove lid


The compote is done


I added 2 tbsp to the button of an 8 oz mason jar, spooned in the yogurt, leaving 1/2 inch headspace I added a tsp more of the compote and put the lid on. Now once you open a jar you can add your favorite granola, honey or enjoy as is.

Frozen Yogurt Pops

Making your own yogurt is the best thing I have ever decided to do! HAnds down it is amazing, simple, and very satisfying to know my children are enjoying a homemade snack with no bad ingredients in it.  Once you make the yogurt, following the link provided, you can mix and match any fruits. They are truly amazing with anything; kiwi, peaches, strawberries, blueberries, blackberries, whatever fruit you want to add will work. These will knock the socks off your kids and yourself!! Replace these with the nasty store bought ones and your kids will thank you!!!





You Will Need:

Organic Strawberries or Blueberries
Homemade Raw Organic Yogurt
Zipzicle Pouches


Chop your berries


I have blueberries for my daughter who is obsessed with them 


Measure out your yogurt, does not matter how much you use, you can just continue to fill your pouches



Mix in fruit


I used a funnel to fill the pouches


Blueberry strawberry 



Freeze until solid..
