Blueberry Bagels

Bagels never last in our home so it is no surprise that I have to make them often. While making a batch of my plain bagels, I decided to experiment with adding a little lemon and a blueberry puree and see how it turns out. By golly miss molly! It was amazing!!! I cannot express or explain how amazing these are! So, just give them a try and let me know what you think on facebook or here! They will knock your socks off!!

You Will Need:

1 Pint Organic Blueberries
2 tbsp Organic Lemon, juiced
1 pk Non-GMO Yeast
1 tsp Salt
5 1/2 Cups Bread Flour
2/3 Cups Water
1/4 Cup Organic Sugar, not pictured


Place water, lemon juice, and blueberries in a blender; blender until puree is smooth 


Done


(see my notes hehe) Place all dry ingredients into a stand mixer


Add the puree and continue to mix


You may need a little more water, add 1 tbsp at a time; until the dough forms a ball. Continue mixing on setting 2 for 10 minutes 


Place in a greased bowl


Cover and rise for 40 minutes in a warm area 


Cut the dough


Weigh out 3 oz balls (this is for mini bagels)


Roll into the ball and place on a cookie sheet, rise for 20 minutes covered with a damp towel


Once done rising, place a pointer finger in the middle and spin until a big enough whole 


They will not look perfect, but honestly who cares! My kids helped so they look 'goofy' (allow these to rest until water boils)


Boil water in a pot with with 6 tbsp of organic raw honey


Add four to five bagels at a time, gently


Boil for 1 minute per side


Drain and place on cookie sheet. Bake at 425 degrees for 15-18 minutes. Cool completely before eating

Banana Oatmeal Cookies

I have never in my life heard on banana oatmeal cookies until my step-father. He gave me the recipe one year for Christmas and it fastly became our family favorite and go too (well beside my chocolate chip cookies! YUM). I did mess with the recipe a bit and I love it this way. First, I took out the shortening and added butter (any fat will do), I also change the sugar to coconut sugar, but for this one I did not because my mother is allergic to coconuts so I kept the Christmas cookies basic organic cane sugar. I added vanilla to the recipe, because any good cookie needs a splash of vanilla, it makes the cookies amazing in my book!! I did not cook these cookies, I froze them for Christmas but once cookie they were amazing!!!

You Will Need:

6 Organic Ripened Bananas
1/2 tsp Organic Vanilla Extract
2 Large Pasture Raised Eggs
2 tsp Organic Cinnamon
1 1/2 Cup Organic Butter, softened
1 tsp Organic Nutmeg
4 Cups Organic Oatmeal
3 Cups Organic Flour
2 Cups Organic Sugar (or coconut sugar)
1 tsp Baking Soda
1 tsp Salt



Add softened butter to your kitchenaid stand mixer


Add sugar to the softened butter; mix on low for 5 minutes or until well combined


Add mashed bananas, vanilla, and eggs mix on low until combined


Add the dry ingredients; add flour last, mix then add flour 


Mix to combine (it is that easy!)


You can freeze the dough like this for Christmas time, or whenever, that is what we LOVE doing, then we pop them in the oven at 350 degrees for 12-14 minutes

We Found Our Home!

We have been looking and looking at homes, and nothing seems to be available once we find the one we love! So decided to stop looking at homes already owned and started looking at one home community! And I can safely say WE FOUND OUR HOME! It is being built and I cannot wait to watch our home be built; every little detail we are apart of! It is so rewarding and we are so excited!! I will continue to get photos/videos of the house! The company that is building our home is call Centex and from what I have read they are a great company! So here goes!!! We are building a 5 bedroom, 3.5 bath 3700 sq foot house with basement (that needs finished but we will get to that later)! Here are some pictures of the model home, will continue to post others later on.

House Hunting

It is very hard to find something we want in a home. It is important for us to get exactly what we want in this house, as our last home 2 years ago did not have what we wanted in it at all and this time we are not settling on anything this time!! We have been working very hard to get all of our debt paid off so that when we get into a house we do not have to worry about too much debt. The best thing we ever learned was Dave Ramsey snowball. We paid off all of our debt, bought a 2015 Honda Odyssey out right and have a pretty amazing savings going right now. A couple of important things to remember when buying a house is to;

1. Make a must haves' list
2. What upgrades are you willing to do
3. Size you can afford, not what you want!
4. Features you can live without
5. Shop around (the most important I think)

You see when we bought our first house in 2011 we were not really knowledged on what to do or what we wanted. We kind of just wanted to get out of a 1 bedroom apartment with a family of 4 and into something that fit us. We looked at maybe 5 used homes (sounds weird saying used) and 2 new homes... we settled on the newer home, with no backyard for the kids, a horrible school district which meant I had to homeschool them and no driveway.

Must Haves':

1. Driveway
2. Backyard
3. Basement (finished or not, we can finish it on our own if needed with Dave Ramsey in our back pockets)
4. Open floor plan
5. Upgraded kitchen
6. 4 Bedrooms 2.5 Baths
7. No more than 2,400 sq ft without basement

We Can Do:

1. Paint
2. Finish basement
3. Build pool in backyard
4. Garden

We plan ahead and I feel like this go round buying a house will be so rewarding and not a drag. Starting this month we plan to look at homes, open houses are amazing, and take photos of what we like so if needing to upgrade later on we have the style we are looking for. So, here we go with a new journey! And I cannot wait to start showing off the house ideas we have found in new posts'. It is important for us to find the perfect home and we plan to go used!!! Crazy huh!?! Because I would never in a million years think buying a used home is okay; just how I grew up! But I actually look forward to walking into these homes and starting a new journey! So far all we have done is looked online, and got some ideas, but now it is time to take it to the next step and start walking the houses. We have a meeting Wednesday 02/15/2017 with our leader to see how that is all going, and what not.

Garth Brooks Concert!

The most amazing night of our lives! I cannot express enough how amazing this night was. My husband, Daniel, has been a long time fan of Garth Brooks (as have I growing up listening to his music) and relied on his music overseas, to remind him of home. While I was trying to figure out what to get Daniel for our 4th anniversary this year (Feb. 14th) I started looking at concert ideas and just trying to figure it out when I came across Garth Brooks concert tickets on StubHub. I was super concerned about buying tickets off StubHub as I did not want to pay money for fake tickets. I contacted them and they explained to me their policy about selling fake tickets and how if they were fake they would have us new tickets as soon as possible and refund. Well, I bought the tickets and boy was I worried! As soon as we arrived in Cincinnati (2 hour drive from us) we went to a casino for lunch and to spend some adult time alone (as this was our 'anniversary' celebration since we both work on the day. We scanned the tickets in at the Us Bank Area and we WERE IN!!! I was so excited they were not fake!! Daniel and I had one of the most amazing nights of our lives and to top it off Garth Brooks said he was recording his new live album that night and we were going to be on the album!! WOW!





























Happy anniversary to my love!!! I could not be happier!! Even though I could not hear, and had the worst headache after the concert I would never change it for anything it was a blast! I LOVE you Daniel!
