Spring Rolls

This is the first time I have ever made spring rolls and let me tell you, I have extra everything and plan to make more for the freezer! They are amazing!! Holy COW!!! Everyone goes nuts over these suckers! Yes, it took me a minute to figure out how to roll these, but once I got it, I was rolling away!!! I was always so scared to try making my own but boy oh boy I am so glad I gave it a test! These ROCK!! I made served them with my fried rice!

You Will Need:

2 tbsp Organic Olive Oil
2 Cups Organic Cabbage, chopped
2 Cups Organic Shredded Carrots
2 Cups Organic Bean Sprouts
1/4 Organic Onion, chopped
1/2 tsp Organic Ground Ginger
2 tbsp Organic Corn Starch
2 tbsp Organic Soy Sauce
1/4 Cup Water
Organic Peanut Oil, for frying
Egg Roll Wraps
Salt & Pepper

Chop cabbage

Add all the veggies; carrots, bean sprouts, cabbage, and onion to a skillet (heat skillet with olive oil first) add ginger, salt and pepper

Cook on medium high for 5-7 minutes (do not want soft, leave a bit of a crunch to them)

Add water and corn starch to a bowl or measuring cup

Add the soy sauce to the measuring up and mix well

Should look like this

Add to pan and cook 3 more minutes

Place 2 tbsp on the corner of your wrap; fold covering the filling, then fold again (take in sides and roll stopping just before closing; brush water on end and roll up)

Putting my girl to work! While folding your rolls, start heating your peanut oil over medium high heat

Fry for 4 minutes per side

So good!

Cookie Dough Ice Cream!

I love ice cream, and making ice cream is my most favorite thing ever! With it heating up in Ohio I am foaming at the mouth with ideas for ice cream recipes. I just cannot wait to share them all!!

You Will Need:

Chocolate Chip Cookie Dough
2 Cups Organic Heavy Cream
2 Cups Organic Raw Whole Milk
1 Cup Organic Sugar, divided
1 Organic Vanilla Bean
5 Organic Pasture Raised Eggs, divided
1 tsp Organic Vanilla Extract
Cuisinart Ice Cream Machine
Tovolo Ice Cream Container

Heat vanilla bean, half the sugar, heavy cream, and milk heat until just boiling (you do not want to ruin the milk)

Take egg yolks, and other half of sugar and beat until pale and fluffy about 4-8 minutes

Once the milk is warm (sorry not pictured) you want to add a little of the milk to the egg mixture and stir, add about 1/2 the picture total and then pour the egg/milk mixture into the pan again. Add vanilla

Heat over medium heat until thick and coating the  back of a wooden spoon, may take 10 minutes (keep stirring)

Strain custard

Place plastic wrap on top, making sure it touches the custard and place in fridge for 3 hours or overnight

Make your cook dough, while custard gets cold. Roll into small balls (smaller than I have here)

Freeze until needed

Freeze according to your directions on your ice cream machine

Add chocolate chip cookie dough with 5 minutes remaining, add as much or as little as you like

Mine takes 20 minutes to freeze

So good!!

Place in a freeze safe bowl, I used glass because I did not have my silicone containers yet

There you go! Amazing homemade vanilla cookie dough ice cream!!

Redmond Facial Mask Review!

First thing I looked at was the ingredients, I did not notice anything bad in them; not like the store bought ones. The packaging is very nice, I really like how colorful it is and I like that they give you a piece to help push up all the mask once you start using it (VERY HELPFUL!). Using the mask, I was a bit stand off because every other time I used a facial mask I broke out in a rash, was extremely itchy, and I just plain out did not like the ingredients. The color of the mask was a bit 'muddy' looking, I really like that. It looked muddy but did not go on as such; it was clear going on and when it dried it turned white; my kids freaked out called me a ghost.. haha! LOVE IT! The only thing I am not liking is the fact I got a small amount in my eye and it burned like crazy!! (but then again I should have taken my contacts out) I let the mask sit for 15 minutes as it instructs too, rinsed my face, and it felt amazing. I never felt my skin so soft and refreshed.

Facial Mask Ingredients: purified water, and redmond clay
Redmond Clay Ingredients: Redmond Clay

Overall, I really, really like this product! It made my face feel so refreshed and so 'new'. I never thought I could find a facial mask that would work so well with such amazing ingredients, but I am so glad I did! Yay for Redmond Facial Mask!

Crochet Bobble Stitch Cross

This is piece number one for the blanket. Depending on how many blankets you are making, make the amount for them. I did say in the video that I was going to make three of these (1 for each of my kids and 1 for my nephew) but I decided to just make 1 for Kailee's blanket. The boy's blanket, as you will see, is really themed toward outdoors things. For example, fish, trucks, cars, trains, baseball, football, and so on. Anyhow.. the Cross is my favorite so far! I love the way it turned out. You can use any color, I decided to use an 'off white' as it is more pure in my mind. Well, follow along side me and let's make an amazing Cross out of bobble stitch.

I have to admit this was super fun working up and trying to figure out. My sister is pregnant with her second child whom she plans to breastfeed, assuming all goes well and she can breastfeed, so I made a medium sized one for her to try out, and a small for myself (since I am not pregnant my D size cup fits just fine in the small- with milk I am not too sure what size I would fit; but hey that is the fun in this, measuring as you go).

Vegetarian Lasagna Roll!

When I made lasagna rolls before my son was terribly sick with the flu bug and ended up throwing it up. Ever since he refuses to eat the rolls. Unless I make them without meat sauce and use veggies. I decided to use my favorite and very diverse vegetable, zucchini. Normally I fry it up with butter, minced garlic, salt and yellow squash (oh now thats amazing!!) But here I wanted to try something different to see if Kristopher would eat it. Boy oh boy! Let me tell you he ate this all up (and FYI he hates hates hates zucchini- no idea why but he does and he had no idea it was in it and I surely did not say a word).

You Will Need:

15 oz. Organic Whole Milk Ricotta
1 Cup Organic Shredded Mozzarella Cheese
1 tsp Organic Dried Parsley
1/4 tsp Organic Dried Garlic
1 Organic Zucchini, shredded
1 tsp Organic Garlic Salt
Organic Pasta Sauce
Organic Lasagna Noodles
1 Organic Pasture Raised Egg
Salt & Pepper

Shredded zucchini

Dry zucchini until no more water comes out

Add the cheeses, egg, salt, pepper, zucchini and mix well

Pour 1 cup pasta sauce to bottom of pan

Add dried garlic and parsley

Add filling and roll

Place in pan on top of pasta sauce

Add pasta sauce to each noodle roll (not much maybe a tbsp each)

Top with mozzarella cheese
Bake 350 degrees for 50 minutes covered with foil, uncover for 10 minutes or until golden brown
