Loaded Chicken Potato Casserole

Casseroles are a simple meal; throw everything into a casserole dish, bake and you have dinner in a matter of 30-40 minutes. I love the idea of an easy dish; as a mother of two very active children it is hard sometimes to find time to want to cook or even do it. I love being able to do minimum work but still have the best results on our supper plates.

You Will Need:

10-15 Organic Red Potatoes
1 pk Organic Bacon, diced
2-4 Pieces of Organic Chicken
Organic Green Onions
Organic Cheese, shredded
Organic Olive Oil
Salt & Pepper
1/2 Organic Onion
Organic Parsley

Dice your potatoes, and place in casserole dish, place 4-6 tbsp of olive oil, salt, pepper, parsley and chopped onions. Bake at 475 degrees for 1 hour or until fork tender... meanwhile 

Dice your bacon

Brown bacon and crisp in your skillet; save 3 tbsp of bacon grease for the chicken

Dice your chicken, season however you wish (I used homemade chicken seasoning, salt, and pepper) 

Cook completely... 5-6 minutes a side on high (my chicken was cooked frozen that is why there is lots of water in the pan- no biggy)

Top chicken on the potatoes 

Add cheese


Green onions

Bake 400 degrees for 10-20 minutes or until cheese is golden brown (I used my broiler was too impatient)
