Buckeye No Bake Cookie

These are my favorite no bake cookies, they are super simple and taste like a buckeye candy. If you have never buckeye candies, you can find that recipe here. Take these two recipes together and place them out on your table during the Ohio State Buckeye football games and they are surely to be a crowd pleaser. As Christmas rounds the corner be sure you put these bad boys out for Santa!! The kids will love making these with you for that good ol' Saint Nick!



You Will  Need:

1/2 Cup Organic Peanut Butter
2 tsp Organic Vanilla
1/2 Cup Organic Raw Milk
1/2 Cup Organic Butter
2 Cup Organic Sugar (I love coconut sugar)
4 tbsp Organic Cacao Powder
4 Cups Organic Quick Cooking Oats




Place the butter, sugar, milk, and cacao powder on the stove 


Heat on medium high to a roiling boil, and boil for 1 minute


Whisking often


Whisk in butter, and vanilla


Stir in oats


Done! YUM!


Drop pieces onto parchment paper, and let cool.

Canning Bean Soup

When canning anything you need to make sure to follow the directions to a tee! You cannot defer from the safe recipe that is provided to you. I do not want to name names, but I have seen some canning YouTubers who are NOT following the safe directions given to them and go off on their own doing whatever they wish. You cannot, by any means, do that unless you speak to the company first and get the approval from them. Click here to find the safe recipe that I am following below. If you have no experience with canning, then I recommend starting with my salsa recipe as it is super easy and does not require much skill. Sanitize your jar according to the link here! The link provided is to ball's website for beginners. And remember, when canning do it safely, according to the safe websites above and follow directions to a tee. You can use either 3 quart jars or 6 pint jars according to the national center for home food preservation.

Healthier Caramel Apples! Corn Syrup FREE

Caramel apples are one of the easiest, yet rewarding Holiday treats you can make your family. The you use healthier, organic, pure ingredients they make me slightly better (by no means am I saying they are good for you, they are a treat and treats should be enjoyed once in awhile). For the longest time, as long as I can remember, I have been afraid to make candy or use the candy thermometer for many reasons.. 1) I burn myself so easily! 2) I am accident prone! the list could go on forever!! But, I embraced this task because I love candy apples around the Holiday times and have not been able to enjoy them since we switched to organic 4 years ago. Well, I embraced the candy thermometer and task at hand to curve a craving and enjoy an amazing Holiday treat! Making caramel is super easy and truly only requires two ingredients. You do not NEED a butt load (<----Hahaha!) of sugar (actually none at all!). You MOST DEFINITELY do NOT need corn syrup (<---- barf!!) at all; that ingredient is one added ingredient that does not do anything for the caramel, honestly. Anyways.... Grab the kids, and your ingredients and pop into the kitchen! You can make these into mini's; all you will need is a melon baller and you are good to go. Just use the melon baller, scoop out pieces around the apple (leave skin on), dip in caramel, and then nuts or whatever toppings you wish and there you go!



You Will Need:

6 Small Organic Apples
1 Cup Organic Honey
1 tsp Organic Vanilla Extract
1/2 tsp Real Salt
1 Cup Organic Heavy Cream
Organic Raw Chopped Nuts



Chill apples in the fridge for 1 hour, at least, after washing them well.


These are what I used


Poke sticks in apples


Mix all the ingredients except apples and nuts


Cook until your thermometer says candy; whisking


Perfect


Cool caramel a little and dip apples


Then dip in nuts! YUM!

Berry Breakfast Bark

This is something I make almost weekly. The kids love this; they will snack on it after school and before school.


You Will Need:

4 Organic Strawberries
1/2 Cup Organic Blueberries
1/2 Cup Organic Granola
4 tbsp Organic Maple Syrup
1 1/2 Cup Greek Yogurt



Mix yogurt and maple syrup together


Pour onto parchment paper (unbleached of course) into an even layer


Sprinkle homemade granola on top of yogurt


Add berries 


Cover with foil and freeze for two hours


Once frozen, break pieces up


Keep in freezer in a ziplock and eat as you wish

How to Make Your Own Potato Flakes

This recipe is the easiest ever! You never have to buy boxed potatoes again! And honestly who wants to buy those when there is so many unhealthy and bad ingredients in there? This recipe you just need organic potatoes and a couple tools to help you get to this step! I know and understand how busy life gets and how you may not have the time to get our a pot of water, peel and boil potatoes then blend them up! So time consuming!! This makes it super easy, and healthy for you and your family!! Enjoy this amazing potato recipe and share with your friends if you find it helpful!!


You Will Need:

Organic Potatoes
Excalibur Food Dehydrator
Foodsaver
Blender



Peel your potatoes


Cut into even sizes; this helps the cooking process


Now wash them suckers... 


Place in a pot of cold water and bring to a boil; once boiling continue to boil until soft and almost mushy 


Save the water, you need that boiling water to mash these... 
Remove potatoes


Blend, adding the water from the potatoes slowing (blending on high until fully mashed)


Spread evenly onto your food dehydrator trays (link provided for the best dehydrator)
Dehydrate on 140 degrees for 12-26 hours
Once the potatoes are crispy like chips (they are done at that point- not sure where my photos went) you will then blend them until fine powder 


There you have it! Potato flakes.. 
To cook- boil 2/3 cups water and 1 tablespoon butter; turn off heat, add 1/4 cup milk and stir in 2/3 cup of the potato flakes and BAM!!

Crochet Pokemon Stocking


Materials:

White Yarn
Black Yarn
Red Yarn
Crochet 5 mm Hook

Row 1: CH 4, SL ST in first CH (Magic Circle)
Row 2: CH 2, 8 HDC in center of circle, SL ST in CH 2
Row 3: CH 2, 2 HDC in each stitch

Row 5: CH 2, 1 HDC round
Row: 6-16: CH 2, 1 HDC round

Canning Pineapple

You cannot, by any means, do that unless you speak to the company first and get the approval from them. If you have no experience with canning, then I recommend starting with with this recipe as it is super easy and does not require you to have much skill {if you are new, this is a water bath canned recipe and that makes it super easy to follow along}. And remember, when canning do it safely, according to the safe websites above and follow directions to a tee. This recipe only allows you to can in pints, so you will need 5 pint jars. You can also go to to the National Center for Home Food Preservation and find all safe recipes and how to maintain and sanitize your jars! Good luck and be safe!

Crockpot Greek Yogurt

That is correct! I am taking extremely simple crockpot yogurt recipe and transforming it into a beautiful thick greek yogurt! It seems the children and Daniel prefer the yogurt more thick whereas I love the yogurt more thin like a non-fat yogurt or Stonyfield's Vanilla Whole Milk yogurt. Yum yum yum either way. With school starting up, I figured it is time again to pop the good old crockpot out and get to making some more yogurt! {Okay let's be honest here, I make yogurt every two weeks- whenever we go to the farm to pick up our milk I make a batch of yogurt}. But anyways, with school starting this week, I figured what better way than to end the summer with greek yogurt and start the school year {lunches} off with a bang! Homemade greek yogurt always has the kids at school asking Kristopher and Kailee 'where did you get the yogurt?' And boy do they love telling them, my mom made it! Haha I love it!! Anyways, this recipe is all basically the same as my vanilla yogurt; the only thing we are changing is straining it to remove the Whey. But do not by any means discard the whey! If you like Whey protein shakes, there you go! You have fresh whey to use for that! I freeze my whey into ice cube trays and my husband takes one cube out, and pops it into his shakes in the AM using our Oster blender {this blender is the best ever! You place all your ingredients into the cup, mix, place lid on and you are good to go. No mess, no fuss, no clean up!



You Will Need:

1/2 Gallon Raw Milk
1/2 Cup Organic Sugar
1/2 Cup Organic Yogurt Starter
1-2 tbsp Organic Vanilla, depending on how you like it





**Yogurt Starter: This is basically plain or vanilla organic yogurt from any store bought. I buy my starter yogurt is maple hill creamery vanilla bean. But the easiest way to get your starter and the cheapest way is to keep 1/2 cup to 1 cup from this batch of yogurt (saving 1 cup if you wish to double the recipe). Peace of cake, eh?! Well give it a try follow along!!


Place your raw milk in your crockpot (any crockpot will do!) 


Place the crockpot on low and let it cook for 2 hours and 45 minutes! DO NOT touch or move the crockpot, just leave it alone and go about your business! We let it go while cooking dinner, and watching Grey's Anatomy (<<<-----yup new obsession!!)


After 2 hours and 45 minutes, turn the crockpot off, unplug it and remove the lid. This is what it should look like if you are using raw milk like we did 


Add your sugar and vanilla at this point and whisk like crazy. 


Whisking away.. Now return to whatever it was you were doing; I cleaned the kitchen, and let this sit OFF, lid on for 3 hours! DO NOT ADD YOUR STARTER YET!


Here it is after 3 hours! Remove 1 cup of the milk mixture and place in a bowl


Here is my milk and yogurt starter


Add your starter to the milk, and whisk


While you are whisking you will see the yogurt start to look like yogurt! This is great! The live cultures are doing what they should and feeding off the sugar! 


Add back to the crock pot


And whisk away for 2 minutes


Wrap your crockpot in a big bowl around the base, place the lid back on


Place another towel on top of the lip, draping down to cover the entire crockpot the rest of the way
Allow to sit for 8 to 12 hours; I left mine for 8 hours and 45 minutes (the longer it sits the tangier the yogurt flavor- which I do NOT like)


Place a white t-shirt or cheesecloth over a strainer on top of a pan. Pour yogurt into the middle {have someone hold the shirt still}. Place in fridge for 4 hours to drain the whey, do not throw the whey out!


Look at how thick!!! 


The whey is amazing protein and very good for you!! Daniel adds some to each of his protein shakes instead of yogurt {since this has the yogurt flavor!}


Enjoy your amazing, homemade greek yogurt!! YUM!
