Buckeye No Bake Cookie

These are my favorite no bake cookies, they are super simple and taste like a buckeye candy. If you have never buckeye candies, you can find that recipe here. Take these two recipes together and place them out on your table during the Ohio State Buckeye football games and they are surely to be a crowd pleaser. As Christmas rounds the corner be sure you put these bad boys out for Santa!! The kids will love making these with you for that good ol' Saint Nick!



You Will  Need:

1/2 Cup Organic Peanut Butter
2 tsp Organic Vanilla
1/2 Cup Organic Raw Milk
1/2 Cup Organic Butter
2 Cup Organic Sugar (I love coconut sugar)
4 tbsp Organic Cacao Powder
4 Cups Organic Quick Cooking Oats




Place the butter, sugar, milk, and cacao powder on the stove 


Heat on medium high to a roiling boil, and boil for 1 minute


Whisking often


Whisk in butter, and vanilla


Stir in oats


Done! YUM!


Drop pieces onto parchment paper, and let cool.

Canning Bean Soup

When canning anything you need to make sure to follow the directions to a tee! You cannot defer from the safe recipe that is provided to you. I do not want to name names, but I have seen some canning YouTubers who are NOT following the safe directions given to them and go off on their own doing whatever they wish. You cannot, by any means, do that unless you speak to the company first and get the approval from them. Click here to find the safe recipe that I am following below. If you have no experience with canning, then I recommend starting with my salsa recipe as it is super easy and does not require much skill. Sanitize your jar according to the link here! The link provided is to ball's website for beginners. And remember, when canning do it safely, according to the safe websites above and follow directions to a tee. You can use either 3 quart jars or 6 pint jars according to the national center for home food preservation.

Healthier Caramel Apples! Corn Syrup FREE

Caramel apples are one of the easiest, yet rewarding Holiday treats you can make your family. The you use healthier, organic, pure ingredients they make me slightly better (by no means am I saying they are good for you, they are a treat and treats should be enjoyed once in awhile). For the longest time, as long as I can remember, I have been afraid to make candy or use the candy thermometer for many reasons.. 1) I burn myself so easily! 2) I am accident prone! the list could go on forever!! But, I embraced this task because I love candy apples around the Holiday times and have not been able to enjoy them since we switched to organic 4 years ago. Well, I embraced the candy thermometer and task at hand to curve a craving and enjoy an amazing Holiday treat! Making caramel is super easy and truly only requires two ingredients. You do not NEED a butt load (<----Hahaha!) of sugar (actually none at all!). You MOST DEFINITELY do NOT need corn syrup (<---- barf!!) at all; that ingredient is one added ingredient that does not do anything for the caramel, honestly. Anyways.... Grab the kids, and your ingredients and pop into the kitchen! You can make these into mini's; all you will need is a melon baller and you are good to go. Just use the melon baller, scoop out pieces around the apple (leave skin on), dip in caramel, and then nuts or whatever toppings you wish and there you go!



You Will Need:

6 Small Organic Apples
1 Cup Organic Honey
1 tsp Organic Vanilla Extract
1/2 tsp Real Salt
1 Cup Organic Heavy Cream
Organic Raw Chopped Nuts



Chill apples in the fridge for 1 hour, at least, after washing them well.


These are what I used


Poke sticks in apples


Mix all the ingredients except apples and nuts


Cook until your thermometer says candy; whisking


Perfect


Cool caramel a little and dip apples


Then dip in nuts! YUM!

Berry Breakfast Bark

This is something I make almost weekly. The kids love this; they will snack on it after school and before school.


You Will Need:

4 Organic Strawberries
1/2 Cup Organic Blueberries
1/2 Cup Organic Granola
4 tbsp Organic Maple Syrup
1 1/2 Cup Greek Yogurt



Mix yogurt and maple syrup together


Pour onto parchment paper (unbleached of course) into an even layer


Sprinkle homemade granola on top of yogurt


Add berries 


Cover with foil and freeze for two hours


Once frozen, break pieces up


Keep in freezer in a ziplock and eat as you wish

How to Make Your Own Potato Flakes

This recipe is the easiest ever! You never have to buy boxed potatoes again! And honestly who wants to buy those when there is so many unhealthy and bad ingredients in there? This recipe you just need organic potatoes and a couple tools to help you get to this step! I know and understand how busy life gets and how you may not have the time to get our a pot of water, peel and boil potatoes then blend them up! So time consuming!! This makes it super easy, and healthy for you and your family!! Enjoy this amazing potato recipe and share with your friends if you find it helpful!!


You Will Need:

Organic Potatoes
Excalibur Food Dehydrator
Foodsaver
Blender



Peel your potatoes


Cut into even sizes; this helps the cooking process


Now wash them suckers... 


Place in a pot of cold water and bring to a boil; once boiling continue to boil until soft and almost mushy 


Save the water, you need that boiling water to mash these... 
Remove potatoes


Blend, adding the water from the potatoes slowing (blending on high until fully mashed)


Spread evenly onto your food dehydrator trays (link provided for the best dehydrator)
Dehydrate on 140 degrees for 12-26 hours
Once the potatoes are crispy like chips (they are done at that point- not sure where my photos went) you will then blend them until fine powder 


There you have it! Potato flakes.. 
To cook- boil 2/3 cups water and 1 tablespoon butter; turn off heat, add 1/4 cup milk and stir in 2/3 cup of the potato flakes and BAM!!

Crochet Pokemon Stocking


Materials:

White Yarn
Black Yarn
Red Yarn
Crochet 5 mm Hook
Scissors
Yarn Needle


Pattern:

Row 1: CH 4, SL ST in first CH (Magic Circle)
Row 2: CH 2, 8 HDC in center of circle, SL ST in CH 2
Row 3: CH 2, 2 HDC in each stitch
Row 4: CH 2, *2 HDC, 1 HDC* round
Row 5: CH 2, 1 HDC round
Row: 6-16: CH 2, 1 HDC round
Row 17: CH 1, SC in 12 stitches, turn work
Row 18-25 : CH 1, SC round

You cannot, by any means, do that unless you speak to the company first and get the approval from them. If you have no experience with canning, then I recommend starting with with this recipe as it is super easy and does not require you to have much skill {if you are new, this is a water bath canned recipe and that makes it super easy to follow along}. Sanitize your jar according to the link here! The link provided is to ball's website for beginners. And remember, when canning do it safely, according to the safe websites above and follow directions to a tee. This recipe only allows you to can in pints, so you will need 5 pint jars. You can also go to to the National Center for Home Food Preservation and find all safe recipes and how to maintain and sanitize your jars! Good luck and be safe!

These canned strawberries are my favorite for smoothies, over angel food cake, plain with whipped cream on top, Kristopher and Kailee take these to school in their planetbox lunch boxes, and at home. I cannot tell you how much Kristopher and Kailee love these. The other night when I canned these, I had some left over so I place it in the fridge to cool, and served it in a ramekin for their "dessert" kind of like a TV dinner! It was amazing, they loved it!! =]] Okay, now that you get where I am coming from on safety, let's get to canning the strawberries.

You Will Need:

8 lbs Organic Strawberries, washed and steams removed
2 Cups Organic Sugar {this is for the pounds amount above only!}
Mason Jars, Quart
Mason Jars, Pints
Pressure Canner
Canning Accessories
Paper Towel or Kitchen Towel

My Favorite School App

When I was homeschooling Kristopher and Kailee, two years ago, I realized I needed to make sure the kids had a place they could read books (since they did not really like sitting down with a book, and getting to the library was hard and far distance for us). I started doing research on apps that they could just use on their iPad's and stubbled across one of my favorite apps ever! Now, I did not exactly know or understand how to use this, at first, or fully understand what it was until I got it. The app is called Kindle Unlimited from Amazon.

Let's get into the basics of the app. First, you pay $9.99 a month for unlimited (umm...yeah its in the name!) books. At first I thought that meant I could read any book ever released and did not have a limit. Well, you are allowed to read 10 books at a time, but once you are down with one or did not like that one, you can pick another book and 'return' that other one. For example, I had checked out 10 books {2 for each kid, and rest for me.. hahaha okay I am a book nerd, so what?!} and Kristopher wanted to get a book called Smoothie Recipes for Kids, he had to decide what book from his two he had 'checked out' to return before he could get the other, once decided the book downloaded instantly! COOL! RIGHT?! Now, if you find a book you want to read and it is not on the Kindle Unlimited section for free reading, you can always open the Amazon app and find the book to buy, then it will automatically download to the kindle app and you are good to go! A lot of times I will post on my FaceBook page FREE books {so be sure you are following/liked my FaceBook page because the books do not stay free for long and you do not want to miss them}.

Secondly, there is a little A symbol on the top right of the Kindle app, once you open it, that will take you directly into the Kindle Unlimited section so you can check out your books. They will give you popular books, kids books, suggestive books based off what you have read already, and so forth. I have posted photos to help you better understand this amazing book app. I strong recommend this for anyone who has children who have iPads and love to read or just need to read more! I went from never reading to reading at least 7 books a month!! {I know, I know, book nerd!! YUP!} One of my favorite sections of the Kindle Unlimited is the Audiobooks!!! I know right!? AMAZING! You will find that your children will love having their own books on their iPads. I know mine go crazy over the books. I have Frozen, Minions, Flat Stanley, Despicable Me 1 & 2, among many other books of the iPads for them!
