"Buddy" The Elf!

Perler beads are extremely fun to do with children. My two kids cannot get enough! I wanna do something different yet fun! I am gonna make 1 Christmas Perler bead a week until Christmas (if I get enough support and want I will do two a week!)

Squatty Potty Changed My Life!

The statement above could not be more true! The squatty potty has changed my life forever. I have always had and been known for having the worst stomach pains ever! I never could understand why I would get these pains, and still do not know why or understand it fully. Since using the squatty potty my pains are almost fully gone. I cannot prove (these are my own beliefs and thoughts not proven) that just because I placed my feet up on this that all my problems were solved. But honestly, they are! I am not Scientist or Doctor so I cannot conclude why my stomach problems have gone away just by using a toilet prop when going poop, but let me tell you! If feels amazing not to have to cry out to Daniel for help, or to hold my hand because my stomach hurts that much.

I may not be releasing unicorn poop into a toilet, but it certainly does flow like it. I was kind of skeptical about the use of this contraption, but I am sold. Not only does it help with going #2, but it makes #1 even easier as well. Before the Squatty was introduced to my life, I found myself straining quite a bit, and more often than not, feeling as though I still needed to go to the bathroom. Taking a dump became downright unpleasant. We all have busy lives and often find that there is not enough time in the world to accomplish everything in one day. Going to the bathroom is not something I plan for, nor predict. Therefore, I wish to get it done and over with so I can accomplish another task before calling it a day. The Squatty allows me to go to the bathroom quickly. There is no other way to put it. I can enjoy the rest of my day not feeling like I am not done from the last time I went.

The Squatty fits snuggly around the bottom of my toilet, out of the way.  It is quite easy to move the Squatty because it is very light. It has cut my time in half in terms of how long I spend going to the bathroom. I can honestly say I have no issues with the product. I live in a apartment that is a little over 1,000 soft., meaning every space that is being used is essential, and there is very little space left over. The size of the Squatty is perfect. From my perspective, $30 on this product pays for itself and quite quickly I might add. Would you rather spend money on laxatives and doctors visits, which total more than $30 and multiple times at that or a one time purchase for the rest of your life?

Mini Peanut Butter Balls!

Also known as Buckeyes! Here in the state of Ohio we call these little suckers Buckeyes, which are the Ohio State Buckeyes football team 'candy'. These are a big tradition in my family, we make these every first football game (the Buckeyes of course!), we make them for Christmas (as gifts to our friends and ourselves), and we make them for the BIG Michigan football game VS the Ohio State Buckeyes! As I said above, these little suckers are amazing. We enjoy making them as a family. I feel like making recipes with your children, partners, and family keep you extremely close. Normally, I would make these in tablespoon sized, but I kind of like them a bit smaller; so I am making them into teaspoon sized but by all means make them as big or small as you wish (remember the smaller you make the more you get, the bigger the less and be sure to reuse your toothpicks). 

You Will Need:
1 Cup Organic Creamy Peanut Butter
1 3/4 Cup Organic Powder Sugar
5 tbsp Organic Butter, melted
1 Cup Organic Chocolate Chips 
Toothpicks



Pour melted butter into a big bowl with the peanut butter, stir until fully mixed in


See how nice and creamy it looks, this is perfect


Stiff the powder sugar into the peanut butter- I do this because there is lots of big pieces in the powder sugar that do not get incorporated unless it is stiffed. Mix well 


This is perfect, now place in the fridge for 30 minutes to an hour


Using a teaspoon, scrape the dough 


You can use tablespoon but I like small


Roll into a ball


Place toothpicks into each ball- this helps with dipping the chocolate. Place in freezer over night, not the fridge!


In a double boiler, I just used a glass bowl with a big pot of boiling water, melt the chocolate


This is the perfect consistency now turn on low 


Working fast, dip the peanut butter into the chocolate and bang off extra (I did this on the side of the bowl)


Once down remove toothpicks 


Spread the peanut butter to cover the holes- be careful here, they can ruin easily because they are VERY soft at this point! Place back in freezer for 10 minutes to harden


I take them off the baking sheet, and place them in a small glass bowl to keep in the freezer on the door, uncovered (I do not seal the bowl, I leave it opened)

Christmas Cookies!

Peanut butter chocolate chip cookies are one of my favorite Holiday cookies! Daniel has a found love for my chocolate chip cookies, and loves peanut butter so I decided to merge the two, and give him a little protein in the cookies; featuring my Peanut Butter Chocolate Chip Cookies!! I do not really have much to say about these, expect if you want to make them a bit more healthier (I mean who are we kidding cookies are cookies, they are not meant to be health but you can use homemade peanut butter instead of store bought (my recipe is linked below) and you can use soy-free dark chocolate chips instead of milk chocolate. Dark chocolate (I am talking about 70% Cacao powder here, not any less than 70%, if you can find higher get that!) is extremely good for you because it helps with weigh loss, (TMI I know) but it helps with sperm production in men, it has antioxidants, lowers blood pressure and so many more, the list is endless. This dough is safe to eat raw! 

You Will Need:

1 Cup Organic Butter, unsalted (softened)
1 1/2 Cup Organic Sugar
2 Large Pasture-Raised Eggs, room temp
2 tsp Organic Vanilla Extract
2 1/4 Cup Organic All-Purpose Flour (or whole wheat)
1 tsp Baking Powder (Bob's Red Mill)
1/2 tsp Salt
2 Cups Organic Dark Chocolate Chips (70%)
1 Cup Organic Peanut Butter 


In your stand mixer, or a deep bowl, attached with a the paddle attachment (I am using my hand mixer), cream the sugar and butter together. 



Add peanut butter, eggs, and vanilla, mix together


Add you dry ingredients in and mix together, until incorporated


Looking GOOD!!

Fold in the chocolate chips


Scoop even amounts on a baking sheet; I always use my small ice cream scoop so it makes even amounts


You can either cook the cookies, at 350 for 9-12 minutes, take out cook 5 minutes, and then cook completely on a cooling rack or...


These are frozen, I LOVE making a bunch of these in minis, and freezing them for later (Daniel always steals the cookie dough and eats it raw, that is why I always use pasture raised eggs).

Ranch Packets!

This recipe is only being used as a dry rub, I do not use this for homemade dressing; I have a much different way to do this and I will share that later on. Remember to always use pure ingredients in your packet mixes. This makes them healthier for you. Ranch packets have so much added in, it is not really very good for you.



You Will Need:

10 tbsp Organic Dried Onions
14 tsp Organic Dried Parsley
2 tsp Organic Garlic Powder 
4 tsp Real Salt 




Mix all ingredients in a mason jar for storage

Taco Packets!

This is literally one of my favorite recipes to share! I feel so strongly about making your own taco seasoning because it is so easy, so affordable, and you can control all the spices. You can add pure ingredients instead of all that crappy ingredients that are in store bought packets. This recipe will last you a while, unless you are like me (and my family) and have tacos almost weekly if not twice a week!

You Will Need:

1 Cup Organic Chili Powder
1/2 Cup Organic Onion Powder
2 tbsp Organic Garlic Powder
1/4 Cup Organic Cumin
2 tbsp Organic Minced Onions
4 tbsp Organic All-Purpose Flour
2 tbsp Organic Paprika 
2 tbsp Real Salt
1 tbsp Organic Cayenne Pepper 





Mix everything together in a mason jar to good storage. Use 3 tbsp per 1 lb of ground meat, add enough water to mix it about

Lasagna Rolls!



Recently, my son asked me to make lasagna; I mean he pushed the subject for weeks 'mom, can you make lasagna?' 'mom, what about today for lasagna?' drove me nutty. Making lasagna can be a task in itself, but it can also be rewarding and fun too. Especially, if you make them into rolls, yes it is messy (that is what people forget to tell you) but it is so rewarding and fun to make. It is rewarding when you will out that beautifully browned lasagna and hear all of your family (kids include) beg to have it while it rests.

You Will Need:

Organic Lasagna Noodles
16 oz. Organic Whole Milk Ricotta 
2 lbs Organic Grass-Fed Ground Meat
8 oz. Organic Mozzarella (balls)
2 32 oz. Jars Organic Pasta Sauce
Homemade Organic Italian Seasoning
2 tsp Organic Minced Garlic
2 tbsp Organic Parsley 
Organic Dried Minced Onions
2 Organic Pasture Raised Eggs
Organic Raw Cheddar Cheese
Parmesan Cheese
Salt & Pepper


Add olive oil to your pan, sprinkle minced dried onions, garlic, with the hamburger



In a separate bowl, add the ricotta, parsley, 2 eggs, salt, pepper, break apart the mozzarella ball, shred raw cheese into bowl, and parmesan cheese; mix together and set aside


Continue cooking hamburger


Add your Italian season, salt and pepper; add tomato sauce and continue to cook. Taste for seasoning adjustments


Shedding in cheese


Mix well


In a 9'x13' bowl, add some of your sauce to the bottom of your bowl


After you cooked the noodles, cool slightly and lay on a baking sheet (this is going to ensure you do not get a mess all over the counter) 


Spread the cheese mixture on top


Add a little sauce


And roll those suckers up; as I said they are messy and stuff will get all over, that is fine, just gather it together (I used a silicone spatula) and place it in the next noodle


Place on top of the sauce


After you filled the pan, top with sauce


Add cheese on top, parsley, and salt; bake at 350 degrees for 30 minutes, then broil for 5 minutes (or less)

Homemade Beef Jerky!

Beef jerky is literally one of my favorite things to make, and is super simple! I mean what is the reason to go buy the nasty store bought crap when you can make your own for much cheaper and much better for you!

You Will Need:

2lbs Organic Grass-Fed London Broil
1/3 Cup Coconut Aminos
1/2 Cup Organic Worcestershire Sauce
1 tbsp Organic Honey
2 tsp Organic Garlic Powder
1/2 tsp Organic Cayenne Pepper
1 tsp Real Salt
1 tsp Organic Pepper
1 tsp Organic Turmeric (forgot to picture)
2 tsp Organic Chili Powder (forgot to picture)



Mix everything together in a bowl


Cut meat


Place meat in bag


Add sauce to bag


Sit overnight in fridge then bake at 170 degrees for 6-8 hours, when done store in air tight container YUM!
