Soft Pretzel Bites!

Pretzels are a known as "America's Favorite". Buying processed foods, as many of you know, is not something I do or really allow my family to do. I make sure anything that we 'could' buy processed, we can make homemade. Honestly pretzels are the most easy dish to make. When you use whole some ingredients, organic ingredients, the dish then becomes 'good'. Yeah, Yeah, Yeah I know... these are still a side dish that you have once in a while, maybe for a football party or birthday party but oh boy! They are amazing and simple to make up! Grab your apron, children, dishes and ingredients and get in the kitchen! This fun recipes is sure to knock your socks off and kids love making them! Mine kids LOVE being in the kitchen (my little protege's).

You Will Need:

2 tbsp Organic Brown Sugar or Agave
4-6 Cups Organic All-Purpose Flour
1 Organic Pasture Raised Egg
2 1/4 tsp Active Yeast
1/2 Cup Baking Soda (Bob's Red Mill)
1 Cup Warm Water (may need more)
2 tsp Salt
3 oz. Organic Pasture Raised Butter, Melted


Either in your stand mixer or a big glass bowl, add butter, water, sugar (honey or agave), and yeast


Sprinkle the yeast on your warm water mixture (test the water first! If it is not 115 degrees pop it in the microwave first before adding yeast)


Looking good my yeast friend! It will bubble and smell very yeast-y... like bread! YUM

Enchilada Sauce & Enchilada's!

Mexican food has always been my number 1 love and food of choice (always- I stress the ALWAYS! MMMHMM...) No matter what the Mexican food choice is; tacos, burritos, enchilada's, taco salad, nacho's, and so forth (the list is endless); I am a huge lover of the food. However, I cannot eat this food out for numerous reasons. One, I have no idea what they put in the food. Two, GMO's. Three, I can control what I put in the food, how much I put in the dish, and so forth. I love having all things control when it comes down to my Mexican dishes. Now I am not saying at all, by any means, my dish is authentic Mexican food but I can say however it is AMAZING! Promise! Enchilada's happens to be one of my favorite dishes, aside from taco salad. The one thing I love about homemade enchilada's is, making the tortilla's with my children... the expression on their faces and the way they love being in the kitchen melt's my heart to a puddle of coconut oil (haha)! Another big thing I love about making this dish homemade is being able to all get into the kitchen together and cook; I make Daniel, Kristopher and Kailee help out and they love it! Making their own 'customized' enchilada makes the kids feel special. One great thing to do with these is make double or ever 4 times the batch and freeze them; you now have homemade "TV" dinner! BAM! Beat that store brands!

You Will Need:

Enchilada Sauce:

4 tbsp Organic Butter
3 tbsp Organic All-Purpose Flour
1 1/2 Cup Organic Broth (homemade is great)
2 tbsp Organic Chili Powder
1 Cup Organic Tomato Sauce
1/2 tsp Organic Garlic Powder
1/2 tsp Organic Onion Powder
1 tsp Organic Cumin
1/4-1/2 tsp Organic Cayenne
Salt & Pepper

Enchilada's:

Organic Cheese, Shredded
Homemade Enchilada Sauce 
Organic Sour Cream
Organic Lettuce, cut
Organic Tomatoes, diced
The Sauce:


Melt the butter over medium heat, you do not want the heat too high or the butter will brown and bubble. I did not picture the rest; I do not know what happened!! (DANIEL was my camera man...hmmm...) You add the flour, and whisk for 1 minute to cook down a bit. Then add the spices, warmed beef broth and the tomato sauce (I used diced tomatoes too YUM). 


Whisk the sauce together, leaving on medium heat to cook until thickens (about 10 minutes roughly) If it is too thick, add a splash more of broth (but be sure to heat the broth first)... OOOO LaLa My favorite PART!! EEK

DIY Crayons!

Taking boring old crayons and turning them into something fun that children want to use is super easy! When my kids were just learning to color I would make them the big fat shaped crayons to help them learn. But because the children are 8 and 7 years old they get to pick which crayon mold they want to use and what crayon colors to mix. These are made by kids for kids!! Materials you will need; silicone molds, crayons, bowl with water, baking sheet, oven-preheat to 250 degrees.



Drop the crayons in the water and let them sit (as you see they will bubble). Leave them in the water for 5 to 10 minutes; this helps the crayon wrappers to peel easily. Some of the crayons are plain old stubborn and will not come off no matter what, so you will have to peel them


Now peel away the crayon paper


They are so pretty just like this!


Break the crayons into tiny pieces and be sure to fill the molds with the broken crayons; as you can see my children lacked a bit on the crayons and did not over fill. Also, be sure your crayons are in the molds, Kristopher missed one and it went onto the baking sheet (which is okay with my because that is our crayon mold baking sheet) Bake at 250 degrees for 10 minutes or until the crayons are completely melted


Super pretty! Let them completely cool; I left mine alone for an hour


Here they are! Are they not super pretty!!! The Christmas trees look amazing!! And the color mixture is beyond cool!!

When You Have an Itch...

IsaBella is by far the funniest dog ever! When she has an itch she just goes to town rubbing all over the floor with her rump in the air! This dog has no care in the world! We got IsaBella 1 year old. Funniest thing ever; Kristopher and Kailee both have May birthday's; when we got Izzy we had no idea when her birthday was just that she was 8 weeks old. Turns out her birthday is May as well, 5 days after our son!! How cool!!

Au Gratin Potatoes!

One of my favorite, beyond favorite, Holiday dishes (aside from green bean casserole) is Au gratin potatoes. I remember growing up my mother would make boxes and boxes of these for us; and at the time I never knew how bad they were (ingredient wise). I remember making them for my kids for a couple years... then I read the ingredient list and flipped out by what all was in them! So, I decided to set out and figure out how in the world to make this organically, fresh, and without all the crappy ingredients in them. And I came up with up with these... My absolute favorite dish ever!


You Will Need:

2 tsp Organic Minced Garlic
3 tbsp Organic Butter
3 tbsp Organic All-Purpose Flour
2 lbs Organic Potatoes, thinly sliced
2 Cups Organic Raw Milk
1 Cup Organic Cheese
Salt & Pepper, to taste
1/2 Cup Organic Onion, minced



Melt butter, add onion, salt, pepper, and garlic to the butter and cook until translucent roughly 5 minutes


Looking about there... 


Heat your milk for a minute; I use raw milk so I am care with how hot I heat it in the microwave (do not want to melt the cream or have any separation) 


Add flour, and cook for 1 minute. Pour in the warmed milk and whisk chunks away; cook for 5 minutes or until thickened


Slice your potatoes; 1/8" thick on a mandolin, butter your dish, layer potatoes, add cream on top 


Layer with potatoes again, then cream until all your cream and potatoes are gone. Cover with foil, bake at 400 degrees for 1 hour uncover and top with cheese continue cooking for another 20 minutes or until golden brown and bubbly 


There you go.. I had mine with green beans, and chicken (of course all organic and homegrown beans; Daniel cooked the chicken and forgot about it!! NERD! Chicken jerky yum!)

Pumpkin Roll!

With the Holiday season approaching extremely fast, I figured it would be an a great idea to share my favorite 'cake' recipe with everyone. Pumpkin is very Halloween, Thanksgiving and Christmas; but to be honest I make this almost all year round (not monthly or anything). Now this cake roll is very easy to make, and very very easy to mess up! You have to be very careful and watch what you do closely. One Thanksgiving Daniel, Kristopher, Kailee, and I went to Whole Foods Market and found a dessert for Thanksgiving dinner with his mother. We stumbled across a pumpkin roll, that was $10 bucks for something super small, and not very many pieces. I decided to set out and figure out how to make it myself. 

You Will Need:

3/4 Cup Organic All-Purpose Flour
3/4 Cup Organic Sugar
1/2 Cup Organic Pumpkin Puree
3 Organic Pasture Raised Eggs, room temp
2 1/2 tsp Organic Homemade Pumpkin Spice
1 tbsp Baking Powder (Bob's Red Mill)
1 tsp Organic Vanilla
1/2 tsp Salt (Real Salt Brand)

Cream Cheese Filling: 
8 oz Organic Cream Cheese, room temp
2 tbsp Organic Butter, unsalted & room temp
1 tsp Organic Vanilla
1 1/4 Cup Organic Powder Sugar


The ingredients


Cream eggs, and sugar together until pale in color and fluffy (4 to 5 minutes)


After 2 minutes, need to continue! 


Add the pumpkin puree and vanilla, beat to combine


Combine dry ingredients in a sifter, and sift together into the wet ingredients


Using a spatula, fold the dry ingredients into the wet (do not OVER fold- I did it until I have no dry ingredients left, clumps included)


Dump into a baking sheet, lined with unbleached parchment paper, lightly greased with coconut oil; making sure to spread into an even level. Bake for 14-16 minutes, cool for 5 mintues


Turn onto a lint free towel lined with lots of powdered sugar (this will keep the roll from sticking) 


Roll the roll however you like I like my roll fat pieces so I rolled it smaller; place on a cooling rack for 2 hours


Cream butter, cream cheese, and vanilla together


Slowly add in the powdered sugar, until you like the sweetness 


Unroll the pumpkin roll and spread your cream cheese frosting


re-roll up the pumpkin roll and place on a decorative plate and into the fridge (I top with powdered sugar for decoration


Roll Roll Roll!


Bam! 


There it is! Amazing, light, fluffy, and delicious

Cream Cheese Frosting!

Need I say more?!? Cream cheese frosting is always a good recipe to have for cupcakes, carrot cake, cinnamon rolls, and so forth (or in Daniel's case, to eat plain as is! that man)! For many years I never understood how to make a fluffy, light, and yummy frosting until I made these for our Christmas celebrations. We tend to keep things the same every year, I guess you could say it is tradition. Christmas mornings we make the rolls together, getting messy is so fun for the Holiday's, then I (ONLY ME!) makes the frosting; sorry I do not trust anyone but myself when it comes to this frosting. A lot of people put way to much sugar...



You Will Need:

1 pkg Organic Cream Cheese, softened
1/4 Cup Organic Butter, softened
1-2 tsp Organic Vanilla Extract
1-2 Cups Organic Powdered Sugar






Cream together the softened cream cheese, butter, and vanilla


Add sugar, I added a little at a time, stir and continue adding until it taste right to me. I never measure the sugar


Mix to combine with a spatula then I use my hand mixer to fluff it up


Done! So yummy, creamy, lightly sweetened and a bit cheese flavor from the cream cheese!
