Also known as Buckeyes! Here in the state of Ohio we call these little suckers Buckeyes, which are the Ohio State Buckeyes football team 'candy'. These are a big tradition in my family, we make these every first football game (the Buckeyes of course!), we make them for Christmas (as gifts to our friends and ourselves), and we make them for the BIG Michigan football game VS the Ohio State Buckeyes! As I said above, these little suckers are amazing. We enjoy making them as a family. I feel like making recipes with your children, partners, and family keep you extremely close. Normally, I would make these in tablespoon sized, but I kind of like them a bit smaller; so I am making them into teaspoon sized but by all means make them as big or small as you wish (remember the smaller you make the more you get, the bigger the less and be sure to reuse your toothpicks).
You Will Need:
1 Cup Organic Creamy Peanut Butter
1 3/4 Cup Organic Powder Sugar
5 tbsp Organic Butter, melted
1 Cup Organic Chocolate Chips
Pour melted butter into a big bowl with the peanut butter, stir until fully mixed in
See how nice and creamy it looks, this is perfect
Stiff the powder sugar into the peanut butter- I do this because there is lots of big pieces in the powder sugar that do not get incorporated unless it is stiffed. Mix well
This is perfect, now place in the fridge for 30 minutes to an hour
Using a teaspoon, scrape the dough
You can use tablespoon but I like small
Roll into a ball
Place toothpicks into each ball- this helps with dipping the chocolate. Place in freezer over night, not the fridge!
In a double boiler, I just used a glass bowl with a big pot of boiling water, melt the chocolate
This is the perfect consistency now turn on low
Working fast, dip the peanut butter into the chocolate and bang off extra (I did this on the side of the bowl)
Once down remove toothpicks
Spread the peanut butter to cover the holes- be careful here, they can ruin easily because they are VERY soft at this point! Place back in freezer for 10 minutes to harden
I take them off the baking sheet, and place them in a small glass bowl to keep in the freezer on the door, uncovered (I do not seal the bowl, I leave it opened)
