Bob Evan's Sausage Gravy

Daniel and I visited Bob Evan's for the first time ever when the kids where in school. I have to admit, I am not too high on eating out (in fact it NEVER happens). I rather enjoy making our food, than eating out. Anyhow, at Bob Evan's we decided to share the Biscuits and Gravy. It was good, a little gelatin-ish for my liking but not bad overall; I did however get a horrible stomach ache from eating it. Boo! I decided to make this from scratch. 1- it is not that difficult to do, 2- it is better for you, because you control the ingredients 3- no stomach aches! I set out to find the best ingredients possible. Now finding a good quality sausage is rather tricky; I know Whole Foods Market has good ones, but I was not in the mood to drive there. I used Kroger Simple Truth brand.

You Will Need:

1 pkg Organic Sausage
1/2 Cup Organic All-Purpose Flour
Salt & Pepper, to taste

Un-case all the sausage into a nice sauce pan, I added a little organic olive oil to keep them from sticking since this pan is stainless steel crap sticks pretty well!

Leave on medium heat to brown

Smells amazing

Once browned, as you can see, I made sure to chop the sausage rather finely

Add in the flour, and cook for 1 minute- this removes the raw floor taste

Pour in the milk; bring to a boil, and reduce, cook for 10 minutes or until your desired thickness

I know Bob Evan's gravy is a brown color, and you can surely obtain that color if you continue to cook this until browned- I, honestly, do NOT like it brown creeps me out lol. I stick to white gravy- add pepper, and taste to adjust salt (ours did not need any)

Pour over homemade fluffy biscuits and enjoy! These are to DIE for! Honest!

Homemade Marshmallows!

WITHOUT CORN SYRUP! WOOT WOOT! That is correct ladies and gentlemen!! There is no, absolutely no, corn syrup in my recipe. I do not believe in corn syrup, I will not buy anything that has corn syrup; nor will I allow my family to consume any (organic or not- NO THANK YOU!). These melt amazingly! Just like the Kraft brand ones, expect without all the JUNK they add to them! As you see pictured below I used great lakes gelatin, this gelatin is made of pure ingredients and is really good for you; because it is made from beef. Shocker but yes! It is amazing! I have used this recipe of marshmallows for over 5 years now, and continue to become more and more impressed with how they turn out; fluffier every time- even more so! Use for s'mores! YUM YUM! Eat plan or pop in hot chocolate; whatever your marshmallow desire-fulfill it with homemade marshmallows not store bought. (My next experiment with these is gonna be dehydrating them-so stick around!!)

After making these this past week I realized something... I actually am making corn syrup when we boil the water and sugar together! Holy COW! How cool is that?! Well hop to it y'all! Make some organic homemade marshmallows and watch everyone go uber crazy over them!

You Will Need:

1 Cup Water
8 tbsp Water
2 tbsp Great Lakes Gelatin
1/4 tsp Salt
2 tsp Organic Vanilla
1 1/2 Cups Organic Sugar

Place your 1 cup water into a sauce pan with the sugar

Place the 8 tbsp of water and gelatin in a separate bowl, leave it alone

Sugar added

Place on medium heat and allow the sugar to dissolve. Stir often

Will start to bubble up, continue stirring and once the bubbles go down a bit continue cooking for 10-15 minutes more

Looks beautiful 

Pour the sugar mixture into the gelatin 

Add salt

Add vanilla

Now you are going to mix this until stiff peaks

It is so beautiful!! So white, fluffy and this is considered done if you want Marshmallow Fluff

Pour into a dish that is line with unbleached parchment paper, covered in powder sugar- this will keep it from sticking

Sprinkle powder sugar on top 

Leave on counter away from any moisture for 8 hours

Dump onto a counter covered in powder sugar


Cover all sides in powder sugar

Beautiful, fluffy, and amazing!!

Green Bean Casserole

Holidays are coming! Holidays are coming!! OMFG!! Get ready! I love, love, love making this green bean casserole. I use as many pure ingredients as I can; for example I used canned green beans (but I canned them myself!), I used raw grass-fed milk, and cream of mushroom soup (not in a can). You can take any classic recipe that may not be 'healthy' for you and you can make it healthy; as I did here. The crispy onions I used only have 4 ingredients in them (which is amazing considering what is in French's onions). When I use items that are non-organic I like to look for 5 or less ingredients, not in a can, and does not contain anything 'bad'.

You Will Need:

4 Cups Organic Green Beans (I used canned that I did)
1 Cup Organic Raw Grass-Fed Milk
1 Organic Cream of Mushroom (12 oz)
Crispy Onions (I got from whole foods market)
Salt & Pepper

Mix the cream of mushroom with the milk, whisk well

Stir in green beans

Add in crispy onions, mix, and top with more. Bake at 350 degrees for 20-25 minutes or until everything is heated through

I served it with roasted potatoes, and pot roast that I cooked in spices and other things, then thickened it with gravy packets (organic from whole foods)

Yellow Cake with Frosting!

I am not a BIG baker, but when I get in the mood to bake, I make from scratch because honestly there is no better feeling then looking at everyone enjoying cake you made not from a box. With Holiday's approaching fast, I thought it would be fun to post a cake recipe that I have used many times. This cake is super fluffy, super moist, and really is simple to make as long as you set the time aside. The taste is something everyone should experience once (fresh, fresh, fresh!!) just remember to use pure, organic ingredients. This cake would be good for any birthday, wedding, Holiday party or just because! I decided to make mine in a 9x13' pan, but you can use two 9' round pans, square pans, or whatever you want (even mini muffins or regular muffins- shh! I know! I was so gonna be mini muffins!!)

You Will Need:


1 Cup Organic Butter, room temp
1 1/2 Cups Organic Pure Cane Sugar
2 Organic Pasture Raised Eggs
3 tsp Organic Vanilla Extract
2 Cups Organic All-Purpose Flour
1 tbsp Baking Powder
1 tsp Salt (Real Salt Brand)
1 Cup Raw Grass-Fed Milk, room temp


2 Cups Organic Powdered Sugar
1/2 Cup Organic Unsweetened Cocoa Powder
3-5 tbsp Organic Butter, room temp
1/4 Cup Raw Grass-Fed Milk
1/2 tsp Organic Vanilla Extract

Cream your softened butter together with sugar

Add egg yolks and blend

Add vanilla

Stir together all the dry ingredients

Add the dry to the wet ingredients, mix well

Grease your pan or pans and sprinkle flour

Beat egg yolks until stiff peaks

Almost there

Fold, GENTLY, into the batter

Looking fluffy 

Pour in your pan, bake at 325 degrees for 40-50 minutes (at 35 minutes check with a toothpick). If you are making mini muffins bake for 15-20 minutes and two 9' pans 25-30 minutes. Once cake is done, remove and cool completely

After cake cools, beat butter for frosting

Sift cocoa powder, and powder sugar into the butter

Add 1 tbsp milk at a time (add more for thinner or less for thicker) add vanilla now too

Whisk away....

YUM! Frost your cake, and place in fridge to cool and stiffen

Most amazing cake ever! Serve with a cold glass of milk or as my father likes to eat it in a bowl with milk poured into the bowl! ENJOY!
